Yes it is 95 degrees here in Texas but it’s officially Fall Y’all!

Which means that pumpkins will be consuming every part of my life starting with my kitchen.

First of all lets be clear here, I am no Betty Crocker or Rachel Ray. Just a girl who often likes her food quick, simple and homemade. One of my absolute favorite fall recipes are pumpkin spice cupcakes.Why is it my favorite you may wonder

They only use 3 ingredients, they’re vegan, cost less than $5 and they’re mouthgasm worthy! Checkout the recipe below!

Pumpkin Spice Cupcakes Recipe

Ingredients

• 1 can of pumpkin puree

• 1 box of spice cake mix

•  4 oz of water

Yep! All you need is

  1. Preheat oven to 350 degrees

2. Combine all 3 ingredients into bowl and mix.

3. Line cupcake pan with baking cups and fill 2/3 of the way.

Because of the consistency of these cupcakes in the past they have tended to stick to the baking cups, so when I found these at Target thought I would give them a try and they worked out great!

4. Bake cupcakes for 20 – 25 minutes.

5. Let cool then add frosting or leave as is and enjoy! (I used a cream cheese frosting but I bet chocolate would be just as delicious!)
